Oat Tuna Tacos

You can always have Taco Tuesdays! Try this quick and easy-to-make recipe made tastier with 7x more fiber (per 100g vs. long grain white rice)!

Ingredients

  • 1 cup Quaker Rolled Oats
  • 1 can Tuna
  • 1 cup Water (room temp)
  • 1 large Chopped tomato
  • 1⁄2 chopped Small-medium red onion
  • 2 cloves Garlic
  • 1 tsp Pepper
  • 1 pinch Salt
  • Sour cream or greek yogurt (as needed)
  • Cilantro (as needed)
  • Grated mozzarella cheese

Procedure

1 In a high speed blender or food processor, blend Quaker Rolled Oats until it’s flour. Add salt and water, blend on high until the oat tortilla batter is smooth.
2 In a greased hot skillet, pour a couple tablespoons of the batter each, spread and cook oat tortillas over medium heat until lightly browned, about 90 seconds on each side. Serve warm.
3 Fry garlic, onions and tomatoes together and then add tuna. Remove from the pan.
4 Fill tortillas with tuna/tomato mix, fill with mozzarella, fry on both sides. Top with red onions, cilantro, sour cream or greek yogurt and chili oil.
