Chicken and Egg Oatmeal Bowl

Ingredients

  • 1⁄2 cup Quaker Rolled Oats
  • 1 Chicken thigh fillet
  • 1 cup Chicken stock
  • 1⁄2 cup Water
  • 1⁄2 cup Sliced mushrooms
  • 2 tsps Oil
  • 1⁄4 tsp Minced ginger
  • 1 Red onion
  • 1 clove of Garlic
  • Salt (as needed)
  • Pepper (as needed)
  • To serve

    1 Poached egg
    1 or 2 tsps Soya sauce, chili oil (optional)
    Sliced scallions

Procedure

1 Heat oil in a pan on medium. Add ginger and sliced mushrooms. Saute until mushrooms are browned. Add salt and pepper to taste.
2 Remove the mushrooms from the pan. Cook chicken with onions and garlic. Add water, chicken stock, and Quaker Rolled Oats to the same pan and cook for 10 minutes till oats are cooked. Add salt to taste.
3 Serve in a bowl and top with sauteed mushrooms, poached egg, scallions and drizzle with soya sauce. Add chili oil and some fresh herbs, if you like some heat.
