Coconut Oat Mango

Have a refreshing day with this quick recipe made tastier with 7x more fiber (per 100g vs. long grain white rice)!

Ingredients

  • 1 cup Quaker Rolled Oats
  • 2 cups Water
  • 1⁄3 cup Full fat coconut milk
  • 1⁄4 cup Milk (can be oat, almond, soy or coconut)
  • 1 tbsp Coconut sugar
  • 1 tsp Vanilla extract
  • 1⁄4 tsp Sea salt
  • Toppings (optional)

    Sliced fresh mango
    Toasted shredded coconut or fresh shredded coconut
    Honey

Procedure

1 Set your can of coconut milk in the refrigerator overnight to help separate the creamy part from the watery part. You will only need the creamy part.
2 Bring water and salt to a boil on the stove. Once boiling, stir in Quaker Rolled Oats, coconut sugar, and vanilla, and reduce heat to medium. Allow to cook for 15 minutes, stirring occasionally.
3 Meanwhile, prep mango cubes.
4 After 15 minutes, reduce heat to low and stir in milk of choice, full fat coconut milk cream. Top with extra mango sliced, shredded coconut and a drizzle of honey (optional), serve and enjoy!
